yeah, you've got some lists here. Do you have an idea of what you want to say? What part of your own perspective will direct this writing?
I am sure it would be different for each piece.
Was the restaurant piece going to have a focus on waitressing?
For both of these you are going to want to narrow your focus -but of course that will happen as you develop some more writing.
